A hearty, satisfying breakfast or brunch casserole featuring savory pork sausage, wholesome spinach, cubed bread, and fluffy eggs baked under a golden layer of melted Cheddar cheese.
1 pound bulk pork sausage
1 onion, chopped
1 clove garlic, minced
1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
6 large eggs
2 cups milk
1 teaspoon salt
½ teaspoon ground black pepper
4 cups cubed dry bread
2 cups shredded Cheddar cheese
Preheat and Prep: Preheat your oven to 350°F. Grease a 9x13-inch baking dish.
Cook Sausage and Aromatics: Heat a large skillet over medium-high heat. Cook and stir pork sausage, chopped onion, and minced garlic in the skillet until the sausage is browned and crumbly, about 5 to 7 minutes. Drain excess grease.
Add Spinach: Stir the thawed and squeezed dry spinach into the sausage mixture until evenly combined, then remove from heat.
Assemble Base: Layer the cubed dry bread evenly into the bottom of the prepared baking dish. Spread the sausage and spinach mixture evenly over the bread. Sprinkle the shredded Cheddar cheese all over the top.
Mix Custard: In a medium bowl, whisk together the eggs, milk, salt, and ground black pepper until smooth and well combined. Pour the egg mixture evenly over the layers in the baking dish.
Bake: Bake in the preheated oven for 45 to 50 minutes, or until the center is set and the top is lightly golden brown. Let cool for a few minutes before slicing and serving.
